Not everyone's choice for an autumnal fast day but if you are following the 5:2 diet, and let's face it who isn't, it's a great filler till your main meal in the evening.

I have got 5:2 down to a fine art now.  I eat and drink more or less what I want the rest of the week - sticking to the Paleo way of eating - but on Mondays and Wednesdays I try to put nothing in my diary, apart from Pilates, have my green smoothie for breakfast (100 calories), gazpacho for lunch (100 calories)  & a light supper of 2 eggs & salad, grilled fish or lean meat & vegetables (300 calories). Total for the day: 500 calories.  If you're a bloke you can add a slice of bread as you're allowed 600 calories! Too easy.

I find having a liquid only day broken by a light meal in the evening gives me all the health benefits of fasting as well as keeping the weight off and no guilt on the other five days!  It really works. The recipe's below.

RECIPE

1 tin of tomatoes

1/2 large cucumber, diced

I - 2 tomatoes, diced

1 yellow pepper & 1 red pepper, diced

1 small red onion

2 cloves of garlic , peeled & chopped

Add cider vinegar to taste

2-3 drops of chilli oil or tabasco

1 teaspoon of olive oil 

Salt & pepper to taste

Fresh herbs - any you like such as basil, parsley or coriander

Keep a little of the diced veg to use as a garnish.  Blend the rest of the ingredients in a blender, refrigerate and then when you serve it up you can add a few Twiglets to the bowl of gazpacho to add some crunch. Easy, quick, delicious and filling.  And raw!
